How’s everybody doing?
I don’t know about you but there are times when the world surrounding me is at odds, the weather outside is misty and paths are not exactly clear, that I just crave a good ole hearty, warm, saucy pasta. You know, that kind that wafts through the kitchen with it’s tomato saucy, oregano-y sashay and makes you go, Hooray!?
Well that’s exactly what I created in this throw together, one pot dish when I was having just such a craving. The amazing thing about this pasta dish beside the fact that it tastes utterly delicious and satisfies all those pasta cravings AND is made in one pot is that this pasta is one you can honestly feel good about eating…kind of as much as you’d like.
I hesitate to say to you that it has no added fat, no cheese, no added salt…because I want you to believe me when I say, you won’t miss any of that! You will not go wanting after eating this one pot wonder of a pasta dish!

Ok, let’s get to the Recipe.
½ bag frozen peppers and onions
1 cup Veggie Italian sausage crumbles or ½ bag of Jakes Italian Sausage Veggie crumbles.
1 tsp. Dried Oregano
½ – 1 tsp Onion Powder
½ – 1 tsp Garlic Powder or granules
1-2 tsp Dried Basil
½ package Frozen Chopped Kale
1 whole Zucchini cut in to bite size pieces
½ jar best quality you can afford pasta sauce
½ bag Rigatoni Pasta OR ½ package Lasagne Noodles broken up into 1” pieces. (use whole grain pasta or legume pasta for added protein and fiber)
4-5 cups of water depending on how dense you’d like the end product.
Fresh Basil for garnish at the end if desired.
Method:
Begin by sautéing on medium heat, ½ a bag of frozen peppers and onions in a 3 qt sauce pan, no oil needed. ( you can chop them into smaller pieces if you’d like. For ease, and let’s face it, that’s what I was going for here, leave them as them tumble out of the bag.)
Once peppers and onions have created the nice brown caramelization on the bottom add the veggie Italian sausage, the garlic powder, onion powder, basil and oregano.
Give that a stir.
Add the frozen kale and kale.
Stir.
Add pasta sauce, pasta and water.
This mixture will look like soup but remember the pasta will absorb much of the water we add.
Cook until pasta is tender.
Garnish with fresh basil.
Serve from the pot or pour into a serving dish to take to the table!
Voila! Easiest comfort pasta dish you might ever make…and possibly one of the tastiest!
