Delicious as a substitute for sour cream or yogurt or simply to add a creaminess to a dish.
*Alpha-Gal Friendly Recipe
1/2 cup of cashews
Soak the cashews for 30 minutes to 3 hours in 1 cup of warm water.
Drain the water and reserve it for later.
Place drained cashews in a high-speed blender (if you use a less powerful blender like an immersion blender your results may be more grainy).
Add back half of the water to the cashews.
Add the juice and the zest of one whole lime.
Blend until silky smooth. If it is too thick add more of the reserved liquid to get to the desired consistency.
Use in the place of sour cream or as a base for dressings.
