When Good Friends Gather
*Alpha-Gal Friendly Recipe
This recipe came about as I spent an evening with a good friend. We conversed over bowls of savory, warming and inspiring soup. The next day the warmth of the friendship and the memory of the soup lingered. I decided to try to recreate what I tasted. This is Friendship Soup.
Ingredients:
1 Medium Onion diced
½ Orange Bell Pepper diced
(Can use a bag of frozen onions and peppers in place of diced pepper and onion)
1 can diced Tomatoes
1 T Veggie Stock Concentrate or bouillon
1 can Chickpeas WITH the canned liquid
6 cups water
2 cups cubed squash or sweet potatoes ( I use one frozen 10 oz bag)
4 packed cups raw chopped kale OR 1 12 oz bag frozen kale
1 teaspoon curry powder or more to taste
2-3 teaspoons finely minced lemongrass
1-2 teaspoons red pepper flakes, to taste
Method:
With a 6 qt or larger pan, on medium heat, saute the onion and pepper without oil. (Yes, you can saute without oil! Let the onions and peppers release their own moisture, keep the temperature even and if it seems to stick, add just a bit of water to help the veggies release.)
You want the onions and pepper to be translucent, not brown.
Add the can of diced tomatoes, the veggie stock or bouillon, chickpeas and 6 cups of water.
Cook 4-5 minutes
Add the curry powder, lemongrass, red pepper flakes if using.
Add the squash or sweet potato and cook until squash or potato are soft but still hold shape, about 15 minutes.
To the soup pot, add the kale and continue to cook until the kale has cooked down into the soup, about 5 minutes.
Serve generously to your friend and yourself.
Garnish with a drizzle of cashew crema, coconut cream, garnish of cilantro or slivered hot peppers.
